Description

This 1-Pot Pea Soup is a hug in a bowl, incredibly easy to make with just a handful of ingredients, vegan, and high in protein.


Ingredients

Scale
  • 2 cups green split peas
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: Fresh herbs for garnish

Instructions

  1. Rinse the split peas under cold water and set aside.
  2. In a large pot, sauté the chopped onion, carrots, and celery over medium heat until softened, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rinsed split peas, broth, and bay leaf.
  5. Bring the mixture to a boil, then reduce heat to a simmer.
  6. Cook uncovered for 30-40 minutes until the peas are tender.
  7. Remove the bay leaf and puree the soup until smooth if desired.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh herbs if using.

Notes

Leftover pea soup can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
