Description

A quick and comforting 15-minute casserole combining crunchy Doritos, seasoned beef, creamy sour cream, and melty cheese, perfect for busy weeknights.

Ingredients

Scale
  • 1 bag of Doritos
  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 packet taco seasoning
  • Chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning, black beans, and diced tomatoes with their juices. Mix well.
  4. In a large baking dish, layer half of the Doritos, followed by half of the beef mixture, half of the sour cream, and half of the cheese. Repeat layering.
  5. Bake for 15 minutes or until the cheese is melted and bubbly.
  6. Sprinkle chopped green onions on top before serving.

Notes

For extra crunch, add crushed Doritos on top for the last five minutes of baking. Make it vegetarian by substituting the beef with sautéed mushrooms and zucchini.
