Description

These breakfast cookies are a delicious and healthy way to start your day, combining the sweetness of banana and the richness of almond butter.


Ingredients

  • 1 cup rolled oats
  • 1 ripe banana, mashed
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 cup dark chocolate chips or dried fruit (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed banana, almond butter, honey, and vanilla extract.
  3. Stir in the rolled oats, baking powder, and salt until well combined.
  4. If using, fold in the chocolate chips or dried fruit.
  5. Scoop spoonfuls of the mixture onto a lined baking sheet, flattening them slightly.
  6. Bake for 10-12 minutes until golden brown.
  7. Allow to cool before serving.
