Ingredients

- 1.5 pounds boneless, skinless chicken breasts, sliced thinly
- 2 large bell peppers, sliced into strips
- 1 large yellow onion, sliced into strips
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fajita seasoning
- 2 tablespoons freshly squeezed lime juice
- 8–10 flour or corn tortillas
- Optional toppings: sour cream, salsa, guacamole, shredded cheese, cilantro, jalapeños
Instructions
- Prepare the chicken and vegetables by slicing them into thin strips.
- Heat a cast iron skillet over medium-high heat and add olive oil.
- Sauté the onions and bell peppers for 5-7 minutes until tender-crisp.
- Add the sliced chicken to the skillet and sprinkle with fajita seasoning.
- Cook the chicken for 5-7 minutes until cooked through and no longer pink.
- Combine the chicken with the vegetables and cook for another minute.
- Add lime juice over the mixture and toss to combine.
- Warm the tortillas in a skillet or microwave.
- Serve with toppings and enjoy!
