Description

A quick and colorful meal featuring tender chicken and vibrant veggies wrapped in warm tortillas.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, sliced thinly
  • 2 large bell peppers, sliced into strips
  • 1 large yellow onion, sliced into strips
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fajita seasoning
  • 2 tablespoons freshly squeezed lime juice
  • 810 flour or corn tortillas
  • Optional toppings: sour cream, salsa, guacamole, shredded cheese, cilantro, jalapeños

Instructions

  1. Prepare the chicken and vegetables by slicing them into thin strips.
  2. Heat a cast iron skillet over medium-high heat and add olive oil.
  3. Sauté the onions and bell peppers for 5-7 minutes until tender-crisp.
  4. Add the sliced chicken to the skillet and sprinkle with fajita seasoning.
  5. Cook the chicken for 5-7 minutes until cooked through and no longer pink.
  6. Combine the chicken with the vegetables and cook for another minute.
  7. Add lime juice over the mixture and toss to combine.
  8. Warm the tortillas in a skillet or microwave.
  9. Serve with toppings and enjoy!
