- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the diced chicken to the skillet, along with cumin, chili powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Stir in the black beans, corn, and salsa. Continue to cook for another 5 minutes.
- In serving bowls, layer the cooked rice first, followed by the chicken mixture. Top with shredded cheese and diced avocado.
- Finish with a sprinkle of fresh cilantro and enjoy!
