Description

A quick and hearty Chicken Burrito Bowl filled with vibrant flavors, perfect for busy weeknights.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the diced chicken to the skillet, along with cumin, chili powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Stir in the black beans, corn, and salsa. Continue to cook for another 5 minutes.
  4. In serving bowls, layer the cooked rice first, followed by the chicken mixture. Top with shredded cheese and diced avocado.
  5. Finish with a sprinkle of fresh cilantro and enjoy!
