Instructions
- In a tall container, combine the egg, Dijon mustard, and vinegar (or lemon juice).
- Use an immersion blender to blend the ingredients together until smooth.
- Slowly drizzle in the oil while continuing to blend until the mayonnaise thickens.
- Add salt to taste, and blend again briefly.
- Store in the refrigerator for up to a week.
Notes
Ensure your egg is at room temperature for better emulsification. If the mayo doesn’t thicken, try adding a little more oil slowly while blending.
