Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1/4 cup salsa
  • Tortilla chips for serving
  • Sour cream (optional)

Instructions

  1. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  2. Add taco seasoning and a splash of water, mixing well. Simmer for 5 minutes until the flavors meld together.
  3. In a large bowl, combine chopped lettuce, black beans, corn, and cherry tomatoes, creating a colorful base for your salad.
  4. Top the salad with the cooked meat, shredded cheese, diced avocado, and a generous scoop of salsa.
  5. Serve with crispy tortilla chips for added crunch and consider adding a dollop of sour cream if desired.
