Description

Delightful strawberry cupcakes burst with fresh strawberries, capturing the essence of summer in every bite.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine flour, baking powder, and salt. Gradually add to the wet mixture, alternating with the milk until just combined.
  6. Fold in the chopped strawberries.
  7. Fill the cupcake liners about 2/3 full with batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Ensure butter is softened at room temperature for easy creaming. Store leftovers in an airtight container at room temperature for up to 3 days.
