Ingredients

Scale
  • 2 large onions
  • 3 tablespoons olive oil
  • 1 cup grated Asiago cheese
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the onions into thick rings or wedges.
  3. Toss the onion slices with olive oil, salt, and pepper until well coated.
  4. Spread the onions evenly on a baking sheet lined with parchment paper.
  5. Roast in the oven for 25-30 minutes, or until tender and caramelized.
  6. Sprinkle the grated Asiago cheese on top of the roasted onions.
  7. Return to the oven and bake for an additional 5-7 minutes until the cheese is melted and golden brown.
  8. Garnish with fresh herbs and serve warm.

Notes

For deeper flavor, add a splash of balsamic vinegar when coating the onions. Cheese alternatives can be used for variety.
