Description
Crispy, golden falafel infused with herbs and spices, served in warm pita with tahini sauce and fresh veggies.
Ingredients

- 1 cup dried chickpeas
- 1 small onion, chopped
- 2–3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking soda
- Salt and pepper to taste
- Oil for frying
Instructions
- Soak the chickpeas in water overnight.
- Drain and rinse the soaked chickpeas.
- In a food processor, combine the chickpeas, chopped onion, minced garlic, parsley, cilantro, ground cumin, ground coriander, baking soda, salt, and pepper.
- Pulse until a coarse mixture forms.
- Refrigerate the mixture for 1-2 hours to set.
- Heat oil in a pan for frying over medium-high heat.
- Shape the chilled mixture into small balls or patties.
- Fry in hot oil until golden brown, about 4-5 minutes per side.
- Remove and drain on paper towels.
- Serve in pita bread with tahini sauce and a colorful salad.
Notes
Use dried chickpeas for best flavor. Test fry a small patty to check seasoning.
