- 4 Fish Fillets (about 6 ounces each) of firm white fish like cod, haddock, snapper, or tilapia
- 1 cup Panko Breadcrumbs
- 1/4 cup Fresh Parsley, chopped
- 1/4 cup Fresh Dill, chopped
- 1/4 cup Fresh Chives, chopped
- 2 cloves Garlic, minced
- 1 large Lemon, zested and juiced
- 1/4 cup Extra Virgin Olive Oil
- 1/4 cup Grated Parmesan Cheese (optional)
- Salt and Black Pepper to taste
- Optional: Red pepper flakes, dried oregano or thyme, garlic powder, or onion powder for extra flavor
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease it lightly with olive oil.
- Pat the fish fillets dry with paper towels and season generously with salt and black pepper.
- Combine panko breadcrumbs, parsley, dill, chives, garlic, lemon zest, Parmesan (if desired), and olive oil in a bowl. Mix until moistened.
- Place the seasoned fish on the baking sheet and evenly distribute the herb crust mixture on top.
- Bake for 12-15 minutes until the fish flakes easily and the crust is golden brown.
- Squeeze fresh lemon juice over the cooked fillets.
- Let the fish rest for a minute before serving and enjoy while hot and crispy!
Notes
For an added kick, feel free to sprinkle some red pepper flakes on top. This dish pairs well with a light salad or roasted vegetables.
