Ingredients

  • Chicken pieces (about 3 lbs), bone-in and skin-on
  • Fresh lemons (2-3), for zest and juice
  • Garlic cloves (6-8), minced
  • Fresh herbs (about 3 tablespoons, mixed)
  • Olive oil (1/4 cup)
  • Salt and black pepper, to taste
  • Optional: White wine (1/4 cup)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the chicken pieces under cold water and pat them dry with paper towels.
  3. Combine the zest and juice of 2 lemons, minced garlic, chopped fresh herbs, olive oil, salt, and black pepper in a large bowl.
  4. Place the chicken in the marinade, ensuring each piece is coated. Marinate for at least 30 minutes or up to 4 hours.
  5. Arrange the marinated chicken in a single layer in a large baking dish.
  6. Slice remaining lemons into rounds and place around the chicken (optional).
  7. Bake for 45-60 minutes, until the juices run clear and a meat thermometer reads 165°F (74°C).
  8. Baste the chicken with pan juices halfway through cooking (optional).
  9. Broil for 2-3 minutes for extra crispy skin (optional).
  10. Rest the chicken for 5-10 minutes before serving.
  11. Garnish with fresh parsley or lemon wedges and serve hot.
