Description

A delectable dish combining the zesty brightness of fresh lemons with the rich flavor of parmesan cheese, all atop tender tilapia fillets.


Ingredients

  • Tilapia Fillets: 1.5 – 2 lbs (about 4-6 fillets)
  • Fresh Lemons: 2 medium-sized
  • Parmesan Cheese: ½ cup, grated
  • Olive Oil: 3 tablespoons, extra virgin
  • Garlic: 2 cloves, minced
  • Dried Oregano: 1 teaspoon
  • Dried Parsley: 1 teaspoon
  • Salt: ½ teaspoon, or to taste
  • Black Pepper: ¼ teaspoon, freshly ground, or to taste
  • Breadcrumbs (Panko or Regular): ¼ cup (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Wash and dry both lemons thoroughly, zest one and juice it for 2-3 tablespoons of liquid. Slice the second lemon into thin rounds.
  3. Rinse the tilapia fillets under cold water and pat them dry with paper towels.
  4. Mix together parmesan cheese, minced garlic, lemon zest, oregano, and parsley in a small bowl.
  5. Brush each fillet with the lemon-olive oil mixture, sprinkle the parmesan mixture on top, and place lemon slices on each fillet.
  6. Bake for 12-15 minutes, or until the tilapia flakes easily with a fork.
  7. Broil for the last 1-2 minutes if a crispy crust is desired.
  8. Serve warm, garnished with parsley or lemon wedges.

Notes

Pair with a light salad or roasted vegetables for a balanced meal. Store leftovers in an airtight container in the fridge for up to 2 days.
