A delectable dish combining the zesty brightness of fresh lemons with the rich flavor of parmesan cheese, all atop tender tilapia fillets.
Ingredients
- Tilapia Fillets: 1.5 – 2 lbs (about 4-6 fillets)
- Fresh Lemons: 2 medium-sized
- Parmesan Cheese: ½ cup, grated
- Olive Oil: 3 tablespoons, extra virgin
- Garlic: 2 cloves, minced
- Dried Oregano: 1 teaspoon
- Dried Parsley: 1 teaspoon
- Salt: ½ teaspoon, or to taste
- Black Pepper: ¼ teaspoon, freshly ground, or to taste
- Breadcrumbs (Panko or Regular): ¼ cup (optional)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Wash and dry both lemons thoroughly, zest one and juice it for 2-3 tablespoons of liquid. Slice the second lemon into thin rounds.
- Rinse the tilapia fillets under cold water and pat them dry with paper towels.
- Mix together parmesan cheese, minced garlic, lemon zest, oregano, and parsley in a small bowl.
- Brush each fillet with the lemon-olive oil mixture, sprinkle the parmesan mixture on top, and place lemon slices on each fillet.
- Bake for 12-15 minutes, or until the tilapia flakes easily with a fork.
- Broil for the last 1-2 minutes if a crispy crust is desired.
- Serve warm, garnished with parsley or lemon wedges.
Notes
Pair with a light salad or roasted vegetables for a balanced meal. Store leftovers in an airtight container in the fridge for up to 2 days.
