Description

Delightful rolls merging sweet banana bread and gooey cinnamon rolls, perfect for brunch or as a sweet snack.


Ingredients

  • 3 ripe bananas
  • 1/2 cup melted butter
  • 1/2 cup milk
  • 1 large egg
  • 3 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon cinnamon

Instructions

  1. Prepare the bananas by mashing them in a large bowl until smooth.
  2. Combine the melted butter, brown sugar, and milk with the bananas.
  3. Activate the yeast by sprinkling it over the mixture and letting it sit for 5 minutes.
  4. Form the dough by gradually adding flour until a soft dough forms.
  5. Knead the dough on a floured surface for 5-7 minutes until smooth.
  6. First rise the dough in a greased bowl, covered, for about 1 hour until doubled.
  7. Prepare the cinnamon sugar filling by mixing brown sugar and cinnamon in a small bowl.
  8. Roll out the dough into a rectangle about 1/4 inch thick.
  9. Spread softened butter over the dough and sprinkle with cinnamon-sugar mixture.
  10. Roll the dough tightly into a log from one edge.
  11. Slice the log into equal pieces, about 1-2 inches thick, and place in a greased baking dish.
  12. Second rise the rolls covered with a towel for about 30 minutes.
  13. Bake the rolls in a preheated oven at 350°F for 20-25 minutes until golden brown.
  14. Cool slightly and frost with your favorite frosting.

Notes

Use very ripe bananas for maximum flavor. Ensure your yeast is fresh for the best rise.
