Description

Deliciously cheesy and crispy on the outside, these stuffed tortilla rolls make a perfect snack or quick meal.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped green onions
  • 1/4 cup diced bell peppers
  • Salt and pepper to taste
  • Cooking spray or olive oil for frying

Instructions

  1. In a mixing bowl, combine the shredded cheese, cream cheese, green onions, bell peppers, salt, and pepper. Mix until well combined.
  2. Lay a tortilla flat on a clean surface. Spread a generous amount of the cheese mixture across the center of the tortilla.
  3. Roll the tortilla tightly, starting from one end and rolling to the other. Repeat with the remaining tortillas and filling.
  4. Heat a skillet over medium heat and lightly grease with cooking spray or olive oil.
  5. Place the rolled tortillas seam-side down in the skillet and cook for 2-3 minutes per side or until golden brown and crispy.
  6. Remove from the skillet, let cool slightly, slice into pinwheels or halves, and serve warm.

Notes

For extra flavor, try adding spices like chili powder or cumin to the cheese mixture. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
