Ingredients

- 1 cup orzo pasta
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup vegetable broth
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Cook the orzo pasta according to package instructions. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add chopped spinach and cook until wilted.
- Stir in ricotta cheese, Parmesan cheese, and vegetable broth. Mix well and let it simmer for a few minutes.
- Add the cooked orzo to the pan. Stir until well combined, and season with salt, pepper, and red pepper flakes if desired.
- Serve warm, garnished with extra Parmesan if desired.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, add a splash of vegetable broth or water.
