Description

A comforting and creamy orzo dish with spinach and ricotta, perfect for weeknight dinners or cozy gatherings.


Ingredients

  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add chopped spinach and cook until wilted.
  4. Stir in ricotta cheese, Parmesan cheese, and vegetable broth. Mix well and let it simmer for a few minutes.
  5. Add the cooked orzo to the pan. Stir until well combined, and season with salt, pepper, and red pepper flakes if desired.
  6. Serve warm, garnished with extra Parmesan if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, add a splash of vegetable broth or water.
