Description

Tender chicken thighs with crispy skin, infused with garlic and herbs, drizzled in a zesty lemon butter sauce.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 lemon (juiced and zested)
  • 4 tablespoons butter
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Season chicken thighs with salt, pepper, thyme, and oregano.
  4. Place chicken thighs skin-side down in the skillet and sear for about 5-7 minutes, or until the skin is crispy.
  5. Flip the chicken thighs and add minced garlic to the skillet.
  6. Squeeze the lemon juice and add the zest.
  7. Add butter to the skillet and let it melt, spooning the mixture over the chicken.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
  9. Garnish with fresh parsley before serving.

Notes

Pairs well with light salads, roasted vegetables, or mashed potatoes. Leftovers can be stored for up to 3 days.
