- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 lemon (juiced and zested)
- 4 tablespoons butter
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium-high heat.
- Season chicken thighs with salt, pepper, thyme, and oregano.
- Place chicken thighs skin-side down in the skillet and sear for about 5-7 minutes, or until the skin is crispy.
- Flip the chicken thighs and add minced garlic to the skillet.
- Squeeze the lemon juice and add the zest.
- Add butter to the skillet and let it melt, spooning the mixture over the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Pairs well with light salads, roasted vegetables, or mashed potatoes. Leftovers can be stored for up to 3 days.
