- 3 cups fresh spinach

- 1 teaspoon dried thyme
- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat until shimmering.
- Add the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the white beans, vegetable broth, oregano, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes, allowing flavors to meld together beautifully.
- Stir in the fresh spinach and cook until wilted.
- Serve hot, garnished with grated Parmesan cheese if desired for an extra layer of flavor.
Notes
Use homemade vegetable broth for a richer flavor. This soup gets better with time, so leftovers are even more delicious.
