Description

A cozy bowl of warm and heartwarming Tuscan White Bean & Spinach Soup filled with rich flavors and vibrant colors.


Ingredients

  • 2 cans white beans (cannellini or great northern)
  • 4 cups vegetable broth
  • 3 cups fresh spinach
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat until shimmering.
  2. Add the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the white beans, vegetable broth, oregano, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15-20 minutes, allowing flavors to meld together beautifully.
  6. Stir in the fresh spinach and cook until wilted.
  7. Serve hot, garnished with grated Parmesan cheese if desired for an extra layer of flavor.

Notes
