Description

A delightful cake infused with fresh lemon zest and juicy blueberries, perfect for celebrations.


Ingredients

  • 1 cup salted butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 3/4 cup sour cream
  • 1 cup 2% milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1/3 cup lemon zest (from 1 large lemon)
  • 2 1/2 cups cake flour (or 2 1/4 cups all-purpose flour)
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups fresh or frozen blueberries (do not thaw if frozen)
  • 2 tablespoons all-purpose or cake flour
  • 1 cup butter (for frosting)
  • 8 oz. cream cheese
  • 45 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1/2 teaspoon almond extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the salted butter and sugar together until smooth.
  3. Add the eggs, vanilla, almond extract, lemon zest, milk, and sour cream, mixing well.
  4. Combine the flour, baking soda, baking powder, and salt in another bowl.
  5. Toss the blueberries with 2 tablespoons of flour in a medium bowl.
  6. Fold the blueberries gently into the batter.
  7. Prepare three 9-inch round cake pans with butter and flour.
  8. Fill each pan with 2 cups of batter.
  9. Bake for 25-30 minutes, or until a toothpick comes out clean.
  10. Cool the cakes in the pans for a few minutes before transferring to a wire rack.
  11. Prepare the frosting by beating butter and cream cheese until smooth.
  12. Add vanilla and almond extracts.
  13. Gradually mix in powdered sugar until desired sweetness is reached.
  14. Loosen the edges of the cakes with a knife and remove them.
  15. Level the cakes if necessary.
  16. Assemble the cake layers with frosting in between.
  17. Apply a crumb coat and refrigerate for 10 minutes.
  18. Finish with a final layer of frosting and garnish with lemon slices and blueberries.

Notes

Always use room temperature ingredients for best results. Tossing blueberries in flour prevents sinking.
