Description

Ingredients

  • 46 beef short ribs
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tablespoon tomato paste
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the short ribs with salt and pepper.
  3. Sear the short ribs in olive oil over medium-high heat until browned, about 8-10 minutes.
  4. Sauté the chopped onion, carrots, and celery until softened, about 5 minutes.
  5. Add the minced garlic and cook for another minute.
  6. Incorporate the tomato paste and cook for 2 minutes.
  7. Deglaze with red wine, bringing to a boil and simmering for 5 minutes.
  8. Combine the short ribs, beef broth, rosemary, thyme, and bay leaves in the pot.
  9. Braise in the oven for 2.5 to 3 hours.
  10. Finish by removing the short ribs and serving with sauce.
