- 4–6 beef short ribs
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 cups red wine
- 2 cups beef broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 2 bay leaves
- 1 tablespoon tomato paste
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (163°C).
- Season the short ribs with salt and pepper.
- Sear the short ribs in olive oil over medium-high heat until browned, about 8-10 minutes.
- Sauté the chopped onion, carrots, and celery until softened, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Incorporate the tomato paste and cook for 2 minutes.
- Deglaze with red wine, bringing to a boil and simmering for 5 minutes.
- Combine the short ribs, beef broth, rosemary, thyme, and bay leaves in the pot.
- Braise in the oven for 2.5 to 3 hours.
- Finish by removing the short ribs and serving with sauce.
