Description

A comforting dish that combines fluffy baked potatoes with shredded chicken and spicy Cajun seasoning, topped with melted cheese and green onions.


Ingredients

  • 4 large russet potatoes
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons Cajun seasoning
  • 1/4 cup green onions, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the potatoes for about 45 minutes or until tender.
  3. In a large bowl, combine shredded chicken, cheese, sour cream, milk, Cajun seasoning, green onions, butter, salt, and pepper.
  4. Once the potatoes are cooked, cut them in half lengthwise and scoop out some of the insides.
  5. Mix the scooped potato with the chicken mixture and fill the potato shells generously.
  6. Place the filled potatoes back in the oven and bake for an additional 15 minutes until heated through.
  7. Serve warm and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
