A comforting dish that combines fluffy baked potatoes with shredded chicken and spicy Cajun seasoning, topped with melted cheese and green onions.
Ingredients

- 4 large russet potatoes
- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons Cajun seasoning
- 1/4 cup green onions, chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Bake the potatoes for about 45 minutes or until tender.
- In a large bowl, combine shredded chicken, cheese, sour cream, milk, Cajun seasoning, green onions, butter, salt, and pepper.
- Once the potatoes are cooked, cut them in half lengthwise and scoop out some of the insides.
- Mix the scooped potato with the chicken mixture and fill the potato shells generously.
- Place the filled potatoes back in the oven and bake for an additional 15 minutes until heated through.
- Serve warm and enjoy!
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
