Description

A comforting blend of creamy potatoes, tender chicken, and zesty Cajun spices, baked to perfection.


Ingredients

Scale
  • 4 large potatoes
  • 2 cups cooked chicken, shredded
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 2 tablespoons Cajun seasoning
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and bake the potatoes until tender, about 45-60 minutes.
  3. While the potatoes are baking, mix the shredded chicken with Cajun seasoning, salt, and pepper in a bowl.
  4. Once the potatoes are done, cut them in half and scoop out some of the flesh into a bowl.
  5. Mix the scooped potato with sour cream, green onions, and half of the cheddar cheese.
  6. Stir in the Cajun chicken and half of the bacon.
  7. Fill the potato skins with the mixture, top with remaining cheese and bacon, and drizzle with olive oil.
  8. Return to the oven and bake for an additional 15-20 minutes, until cheese is melted and bubbly.
  9. Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
