A comforting blend of creamy potatoes, tender chicken, and zesty Cajun spices, baked to perfection.
Ingredients

- 4 large potatoes
- 2 cups cooked chicken, shredded
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 2 tablespoons Cajun seasoning
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and bake the potatoes until tender, about 45-60 minutes.
- While the potatoes are baking, mix the shredded chicken with Cajun seasoning, salt, and pepper in a bowl.
- Once the potatoes are done, cut them in half and scoop out some of the flesh into a bowl.
- Mix the scooped potato with sour cream, green onions, and half of the cheddar cheese.
- Stir in the Cajun chicken and half of the bacon.
- Fill the potato skins with the mixture, top with remaining cheese and bacon, and drizzle with olive oil.
- Return to the oven and bake for an additional 15-20 minutes, until cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
