Description

A simplified version of traditional paella that captures the vibrant flavors of Spain, perfect for weeknight cooking.


Ingredients

Scale
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup mixed seafood (shrimp, mussels, etc.)
  • 1 cup diced chicken or chorizo
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon saffron (optional)
  • Salt and pepper to taste
  • Olive oil
  • Lemon wedges (for serving)

Instructions

  1. In a large skillet, heat olive oil over medium heat until shimmering.
  2. Add the diced onion, bell pepper, and minced garlic; sauté until softened and fragrant, about 5 minutes.
  3. Stir in the rice, paprika, and saffron (if using), letting everything toast together for a minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Once boiling, reduce the heat, add your seafood and diced chicken or chorizo, and let simmer until the rice is cooked and the seafood is heated through, about 20 minutes.
  6. Taste and season with salt and pepper as needed.
  7. Serve the paella straight from the skillet with lemon wedges.
