A simplified version of traditional paella that captures the vibrant flavors of Spain, perfect for weeknight cooking.
Ingredients

- 1 cup rice
- 2 cups chicken broth
- 1 cup mixed seafood (shrimp, mussels, etc.)
- 1 cup diced chicken or chorizo
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon saffron (optional)
- Salt and pepper to taste
- Olive oil
- Lemon wedges (for serving)
Instructions
- In a large skillet, heat olive oil over medium heat until shimmering.
- Add the diced onion, bell pepper, and minced garlic; sauté until softened and fragrant, about 5 minutes.
- Stir in the rice, paprika, and saffron (if using), letting everything toast together for a minute.
- Pour in the chicken broth and bring to a boil.
- Once boiling, reduce the heat, add your seafood and diced chicken or chorizo, and let simmer until the rice is cooked and the seafood is heated through, about 20 minutes.
- Taste and season with salt and pepper as needed.
- Serve the paella straight from the skillet with lemon wedges.
