Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- Mix the grated zucchini, flour, cheddar cheese, chives, baking powder, baking soda, and salt in a bowl.
- Whisk together the oil, milk, and egg in another bowl until combined.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- Fill each muffin cup about 2/3 full with the mixture.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool slightly in the pan before transferring to a wire rack.
