Description

Delicious cornbread waffles infused with cheddar cheese and jalapeños for a spicy twist on a breakfast favorite.


Ingredients

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder

  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 large eggs

  • 12 jalapeños, diced (seeds removed for less heat)

Instructions

  1. Preheat your waffle iron and grease it lightly.
  2. In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the cheddar cheese and diced jalapeños.
  6. Pour the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions until golden brown and crisp.
  7. Serve warm with butter or syrup.
