- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1–2 jalapeños, diced (seeds removed for less heat)
Instructions
- Preheat your waffle iron and grease it lightly.
- In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the buttermilk, vegetable oil, and eggs.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the cheddar cheese and diced jalapeños.
- Pour the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions until golden brown and crisp.
- Serve warm with butter or syrup.
Notes
Experiment with different cheeses or add cooked bacon for a smoky flavor.
