Instructions
- In a large pot, heat the butter over medium heat. Add the chopped onion and minced garlic, sauté until soft and fragrant.
- Sprinkle the flour over the onions and garlic, stirring continuously to form a roux. Cook for 1-2 minutes until it’s lightly golden.
- Gradually add the chicken or vegetable broth while whisking to avoid lumps.
- Bring the mixture to a gentle simmer and cook for about 10 minutes until the base is slightly thickened.
- Reduce the heat and stir in the milk or cream, mixing thoroughly until smooth.
- Gradually add the shredded cheese, stirring until it melts completely and the soup is smooth and creamy.
- Season the soup with salt and pepper to taste.
- Ladle the soup into bowls and serve hot, garnished with chopped herbs if desired.
Notes
For a thicker soup, add a bit more flour when creating the roux. Great with crusty bread or a garden salad.
