Description

Ingredients

  • 2 cups shredded cheese (cheddar, mozzarella, or your choice)
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup flour
  • Salt and pepper to taste
  • Optional: chopped herbs (like chives or parsley) for garnish

Instructions

  1. In a large pot, heat the butter over medium heat. Add the chopped onion and minced garlic, sauté until soft and fragrant.
  2. Sprinkle the flour over the onions and garlic, stirring continuously to form a roux. Cook for 1-2 minutes until it’s lightly golden.
  3. Gradually add the chicken or vegetable broth while whisking to avoid lumps.
  4. Bring the mixture to a gentle simmer and cook for about 10 minutes until the base is slightly thickened.
  5. Reduce the heat and stir in the milk or cream, mixing thoroughly until smooth.
  6. Gradually add the shredded cheese, stirring until it melts completely and the soup is smooth and creamy.
  7. Season the soup with salt and pepper to taste.
  8. Ladle the soup into bowls and serve hot, garnished with chopped herbs if desired.

Notes

For a thicker soup, add a bit more flour when creating the roux. Great with crusty bread or a garden salad.
