Description

A comforting one-pan dish featuring tender chicken seasoned with paprika and cumin, simmered with tomatoes and fresh vegetables.


Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chicken thighs and drumsticks, seasoning with salt and pepper. Brown them on all sides, allowing them to develop a beautiful golden crust.
  2. Remove the chicken from the skillet and set it aside. In the same skillet, add the chopped onion, minced garlic, and sliced bell pepper. Sauté until the vegetables are softened—about a couple of minutes.
  3. Stir in the diced tomatoes, chicken broth, paprika, and cumin. This will fill your kitchen with mouthwatering aromas.
  4. Return the chicken to the skillet, ensuring it’s nestled among the vegetables. Cover and simmer for about 30-40 minutes until the flavors meld and the chicken is tender.
  5. Garnish before serving with fresh parsley for an added touch.
