- 4 chicken drumsticks

Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chicken thighs and drumsticks, seasoning with salt and pepper. Brown them on all sides, allowing them to develop a beautiful golden crust.
- Remove the chicken from the skillet and set it aside. In the same skillet, add the chopped onion, minced garlic, and sliced bell pepper. Sauté until the vegetables are softened—about a couple of minutes.
- Stir in the diced tomatoes, chicken broth, paprika, and cumin. This will fill your kitchen with mouthwatering aromas.
- Return the chicken to the skillet, ensuring it’s nestled among the vegetables. Cover and simmer for about 30-40 minutes until the flavors meld and the chicken is tender.
- Garnish before serving with fresh parsley for an added touch.
