Description

A comforting bowl of Chicken and Dumplings that evokes the warmth of home-cooked goodness.


Ingredients

Scale
  • 1 whole chicken
  • 4 cups chicken broth
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1/2 cup chopped onions
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • Salt and pepper to taste

Instructions

  1. In a large pot, place the whole chicken and cover it with chicken broth. Bring it to a boil, then reduce the heat to a simmer. Cook for 30-40 minutes, remove the chicken and shred the meat.
  2. In the same pot, add chopped onions, carrots, and celery. Cook until tender.
  3. In a bowl, combine flour, baking powder, and salt. Cut in the butter until resembling coarse crumbs. Stir in milk until just combined to form a dough.
  4. Return shredded chicken to the pot and mix with vegetables. Season with salt and pepper.
  5. Drop spoonfuls of dumpling dough onto the chicken mixture. Cover and cook for 15 minutes without lifting the lid.
  6. Serve warm, allowing family and friends to enjoy.

Notes

Store leftovers in an airtight container for up to three days. Adding a splash of chicken broth helps when reheating.
