- 1 onion, chopped
- 3 garlic cloves, minced
- 1 pound chicken thighs, cut into pieces
- 1 can (14 ounces) diced tomatoes
- 2 cups chicken broth
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 cup fresh parsley, chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1 egg
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until they are soft and fragrant.
- Add the chicken pieces to the pot, allowing them to sear until they’re beautifully browned on all sides.
- Stir in the diced tomatoes, chicken broth, red pepper flakes, salt, and pepper. Bring to a simmer and cook for about 20-25 minutes, or until the chicken is fully cooked through and tender.
- Meanwhile, in a mixing bowl, combine the flour, baking powder, Parmesan cheese, milk, and egg until just mixed. Be careful not to overmix—lumps are your friends here!
- Drop spoonfuls of the dumpling mixture into the lightly bubbling stew. Cover the pot and let them cook for an additional 15 minutes—this is where the magic happens!
- Once the dumplings are fluffy and cooked through, stir in the chopped parsley for a burst of freshness. Serve hot and enjoy!
Notes
For fluffier dumplings, do not overmix the batter. Adjust red pepper flakes to taste for desired heat.
