Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 pound chicken thighs, cut into pieces
  • 1 can (14 ounces) diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 cup fresh parsley, chopped
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 egg

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until they are soft and fragrant.
  2. Add the chicken pieces to the pot, allowing them to sear until they’re beautifully browned on all sides.
  3. Stir in the diced tomatoes, chicken broth, red pepper flakes, salt, and pepper. Bring to a simmer and cook for about 20-25 minutes, or until the chicken is fully cooked through and tender.
  4. Meanwhile, in a mixing bowl, combine the flour, baking powder, Parmesan cheese, milk, and egg until just mixed. Be careful not to overmix—lumps are your friends here!
  5. Drop spoonfuls of the dumpling mixture into the lightly bubbling stew. Cover the pot and let them cook for an additional 15 minutes—this is where the magic happens!
  6. Once the dumplings are fluffy and cooked through, stir in the chopped parsley for a burst of freshness. Serve hot and enjoy!

Notes

For fluffier dumplings, do not overmix the batter. Adjust red pepper flakes to taste for desired heat.
