Description

Juicy, tender chicken skewers marinated in yogurt and spices, grilled to perfection and served with saffron-infused basmati rice and grilled vegetables.


Ingredients

  • 2 boneless chicken breasts, cubed
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)
  • Basmati rice (for serving)
  • Saffron (optional, for rice)
  • Grilled vegetables (for serving, optional)

Instructions

  1. Whisk together the marinade by combining yogurt, lemon juice, olive oil, minced garlic, cumin, coriander, salt, and pepper.
  2. Marinate the chicken in the mixture for at least 1 hour, preferably overnight.
  3. Preheat your grill to medium-high heat.
  4. Assemble the skewers by threading the marinated chicken onto them.
  5. Grill the chicken skewers, turning every few minutes, until the chicken reaches an internal temperature of 165°F (about 10-15 minutes).
  6. Cook the basmati rice according to package instructions, infusing with saffron if desired.
  7. Serve the chicken kebabs hot with saffron-infused rice and grilled vegetables.

Notes

For best flavor, marinate the chicken overnight. If using wooden skewers, soak them in water beforehand to prevent burning.
