- 1 cup plain yogurt

- Skewers (soaked in water if wooden)

Instructions
- Whisk together the marinade by combining yogurt, lemon juice, olive oil, minced garlic, cumin, coriander, salt, and pepper.
- Marinate the chicken in the mixture for at least 1 hour, preferably overnight.
- Preheat your grill to medium-high heat.
- Assemble the skewers by threading the marinated chicken onto them.
- Grill the chicken skewers, turning every few minutes, until the chicken reaches an internal temperature of 165°F (about 10-15 minutes).
- Cook the basmati rice according to package instructions, infusing with saffron if desired.
- Serve the chicken kebabs hot with saffron-infused rice and grilled vegetables.
Notes
For best flavor, marinate the chicken overnight. If using wooden skewers, soak them in water beforehand to prevent burning.
