- 2 chicken breasts
- 1 cup Marsala wine
- 1 cup mushrooms, sliced
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown on both sides and fully cooked through, about 6-7 minutes per side. Remove and set aside.
- Add sliced mushrooms to the same skillet and sauté until browned, stirring to ensure caramelization.
- Pour in the Marsala wine and let it simmer for a few minutes until slightly reduced.
- Add orzo and chicken broth, stirring gently to combine. Cover and cook until tender, about 10-12 minutes.
- Stir in heavy cream and return chicken to the skillet. Let it simmer for a couple of minutes.
- Garnish with fresh parsley and serve warm.
Notes
Always taste and adjust seasoning. If you don’t have Marsala wine, dry cooking sherry or white wine can be a substitute.
