Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup pasta (like penne or rotini)
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken with garlic powder, onion powder, salt, and pepper in a crock pot.
  2. Add the chicken broth and diced tomatoes to the pot.
  3. Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the crock pot.
  5. Stir in the pasta and cook for another 30 minutes until the pasta is tender.
  6. Add the heavy cream and Parmesan cheese, stirring until smooth.
  7. Serve hot, garnished with fresh parsley.
