- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup fresh lemon juice
- 1 cup chicken broth
- 1/4 cup capers
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken breasts generously with salt and pepper.
- Dredge each chicken breast in flour, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat.
- Sauté the chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet.
- In the same skillet, add butter, lemon juice, chicken broth, and capers. Bring to a simmer.
- Return the chicken to the skillet and simmer for an additional 5 minutes.
- Garnish with chopped parsley before serving.
Notes
Serve alongside pasta or a fresh salad. Store leftovers in an airtight container for up to three days.
