- 1 pound shrimp, peeled and deveined
- 1/2 cup fresh lime juice
- 1/4 cup chopped red onion
- 1/2 cup diced tomatoes

- 1 jalapeño, finely chopped

- Tortilla chips for serving
Instructions
- In a bowl, combine the shrimp and lime juice. Let it marinate for about 15-30 minutes until the shrimp turns pink and opaque.
- Once the shrimp is beautifully transformed, drain the excess lime juice, keeping just enough for flavor.
- Add red onion, tomatoes, cilantro, jalapeño, salt, and pepper to the shrimp.
- Toss everything together gently to ensure all components are equally coated in that lovely lime juice.
- Serve chilled with tortilla chips, a sure way to get everyone digging in!
Notes
Ceviche is best enjoyed fresh but can be stored in an airtight container in the fridge for up to 2 days. Consume within the day for the best taste.
