Description

A refreshing and zesty ceviche made with fresh shrimp marinated in lime juice, combined with vibrant vegetables for a perfect summer dish.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/2 cup fresh lime juice
  • 1/4 cup chopped red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 jalapeño, finely chopped
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. In a bowl, combine the shrimp and lime juice. Let it marinate for about 15-30 minutes until the shrimp turns pink and opaque.
  2. Once the shrimp is beautifully transformed, drain the excess lime juice, keeping just enough for flavor.
  3. Add red onion, tomatoes, cilantro, jalapeño, salt, and pepper to the shrimp.
  4. Toss everything together gently to ensure all components are equally coated in that lovely lime juice.
  5. Serve chilled with tortilla chips, a sure way to get everyone digging in!

Ceviche is best enjoyed fresh but can be stored in an airtight container in the fridge for up to 2 days. Consume within the day for the best taste.
