Description

Delightful cookies with a creamy cheesecake center and warm cinnamon flavor, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisking together the flour, baking soda, and salt in a bowl.
  3. Creaming together the softened butter, granulated sugar, and brown sugar in a large bowl until smooth and fluffy. Beat in the vanilla extract and egg.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Stir in the ground cinnamon.
  5. In another bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract for the filling.
  6. Take a tablespoon of cookie dough, flatten it, place a teaspoon of the cream cheese filling in the center, and wrap the dough around it.
  7. Place each ball on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-14 minutes or until they’re lightly golden. Allow to cool on the baking sheet.
  9. Whisk together powdered sugar, milk, and vanilla extract for the glaze.
  10. Drizzle the glaze over the cooled cookies to finish.

Store leftover cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
