Description

Ingredients

  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup icing sugar (for drizzle)

Instructions

  1. Combine the dry ingredients in a skillet: flour, sugar, baking powder, baking soda, and salt.
  2. Whisk the wet ingredients together: buttermilk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  4. Heat the skillet over medium heat and pour the pancake batter to form pancake rounds.
  5. Mix together the cinnamon and brown sugar; sprinkle generously over the pancakes just before flipping.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Drizzle the pancakes with icing sugar before serving.

Notes

Make sure your buttermilk is at room temperature for fluffier pancakes. You can also substitute buttermilk with regular milk mixed with vinegar.
