Description

Ingredients

  • 1/2 cup streusel topping (made with flour, butter, sugar, and cinnamon)

Instructions

  1. Preheat your oven and prepare the pan: Preheat your oven to 350°F (175°C) and generously grease a loaf pan with cooking spray or butter.
  2. Mix the wet ingredients: In a large bowl, mix the grated zucchini, eggs, vegetable oil, and vanilla extract until everything is well combined.
  3. Combine the dry ingredients: In another bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and ground cinnamon until evenly blended.
  4. Incorporate the wet and dry ingredients: Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix!
  5. Pour the batter into the pan: Pour the luscious batter into the prepared loaf pan, smoothing it out evenly with a spatula.
  6. Create the streusel topping: In a small bowl, mix together flour, sugar, cinnamon, and softened butter until you achieve a crumbly texture. Sprinkle this over the batter.
  7. Bake to perfection: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
