Description
A light and refreshing dish featuring grilled shrimp marinated in citrus and served over spiralized zucchini noodles.
Ingredients

- 1 pound shrimp, peeled and deveined
- 4 zucchini, spiralized into zoodles
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons orange juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, combine the olive oil, lemon juice, orange juice, minced garlic, salt, and pepper. Stir well until everything is nicely blended.
- Add the shrimp to the bowl with the marinade and let it soak up those flavorful notes for 15-20 minutes.
- While the shrimp is marinating, preheat your grill or grill pan over medium-high heat.
- Place the shrimp on the grill and cook for about 2-3 minutes on each side until they turn pink and opaque.
- In another pan, heat a splash of olive oil and gently sauté the zoodles for about 2-3 minutes until they are just tender but still retain a bit of crunch.
- Serve the zoodles on a plate, topped with the grilled shrimp and a sprinkle of fresh parsley.
Notes
Marinate the shrimp for at least 15-20 minutes for the best flavor. Use a grill pan or broil in the oven if you don’t have an outdoor grill.
