Description

A light and refreshing dish featuring grilled shrimp marinated in citrus and served over spiralized zucchini noodles.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 zucchini, spiralized into zoodles
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons orange juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, combine the olive oil, lemon juice, orange juice, minced garlic, salt, and pepper. Stir well until everything is nicely blended.
  2. Add the shrimp to the bowl with the marinade and let it soak up those flavorful notes for 15-20 minutes.
  3. While the shrimp is marinating, preheat your grill or grill pan over medium-high heat.
  4. Place the shrimp on the grill and cook for about 2-3 minutes on each side until they turn pink and opaque.
  5. In another pan, heat a splash of olive oil and gently sauté the zoodles for about 2-3 minutes until they are just tender but still retain a bit of crunch.
  6. Serve the zoodles on a plate, topped with the grilled shrimp and a sprinkle of fresh parsley.

Notes

Marinate the shrimp for at least 15-20 minutes for the best flavor. Use a grill pan or broil in the oven if you don’t have an outdoor grill.
