Description

Soft, crumbly cookies that blend the flavors of classic coffee cake, perfect for enjoying with a cup of coffee or at gatherings.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tablespoon cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the brown sugar, granulated sugar, and softened butter until smooth.
  3. Beat in one large egg and the vanilla extract.
  4. Whisk together the all-purpose flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, mixing until just combined.
  6. Fold in the chopped walnuts or pecans if using.
  7. Scoop out portions of dough and place them onto the prepared baking sheet, spacing them apart.
  8. Sprinkle each cookie with cinnamon sugar.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
