Description

Delight in these soft chocolate cookies filled with creamy coffee ice cream, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup coffee ice cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together the flour, cocoa powder, baking powder, and salt in a bowl.
  3. Beat together the softened butter, granulated sugar, and brown sugar until creamy.
  4. Add in the egg and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of batter onto the prepared baking sheet and flatten slightly.
  7. Bake for 10-12 minutes, until edges are set but centers remain soft.
  8. Allow cookies to cool completely on a wire rack.
  9. Sandwich a scoop of coffee ice cream between two cookies.
  10. Serve immediately or freeze for later enjoyment.
