Description

Delicious and fluffy egg bites reminiscent of Starbucks, perfect for a gourmet breakfast at home.


Ingredients

Scale
  • 8 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (e.g., cheddar, mozzarella)
  • 1/2 cup diced vegetables (e.g., bell peppers, spinach)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Grease a muffin tin with cooking spray or oil.
  3. In a blender, combine the eggs, cottage cheese, salt, and pepper, and blend until smooth.
  4. Stir in the shredded cheese and diced vegetables.
  5. Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
  7. Let cool for a few minutes before removing from the muffin tin.
