Description

A hearty and comforting casserole that combines cornbread, meat, beans, and vegetables, making it perfect for any occasion.


Ingredients

  • 1 package cornbread mix
  • 1 can black beans, rinsed and drained
  • 1 cup cooked ground beef or sausage
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1 egg
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the cornbread mix, egg, and milk until well combined.
  3. In a greased baking dish, layer the cooked meat, black beans, corn, and salsa.
  4. Pour the cornbread batter generously over the top of the layered ingredients.
  5. Sprinkle shredded cheese over the cornbread batter.
  6. Bake for 20-25 minutes or until the top is golden brown and cooked through.
  7. Let the casserole cool for a few minutes before serving.

Notes

For a quicker prep time, use pre-cooked meat or skip the meat and double the beans or add colorful bell peppers. Letting the casserole rest after baking allows for easier serving.
