- 1 cup all-purpose flour
- 2 tablespoons sugar

- 2 large eggs
- 1/2 cup milk
- 1 tablespoon orange zest
- 1/2 cup fresh cranberries (chopped)
- Butter or oil for cooking
Instructions
- Mix the ricotta cheese, eggs, and milk until smooth.
- Whisk together the flour, sugar, baking powder, and salt in another bowl.
- Add the dry ingredients to the wet ingredients, stirring just until combined.
- Fold in the orange zest and chopped cranberries.
- Heat a skillet over medium heat and add butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with maple syrup or fresh fruit.
Notes
Don’t over-mix the batter. For a richer flavor, substitute milk with buttermilk.
