Description

A delightful blend of savory crawfish, buttery cornmeal, and spices, perfect as a side dish or comfort food.


Ingredients

  • 1 cup cornmeal
  • 1 cup milk
  • 1 cup crawfish tails (cooked)
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup shredded cheddar cheese
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the cornmeal, baking powder, salt, and black pepper.
  3. In another bowl, whisk together the milk, eggs, and vegetable oil until smooth.
  4. Combine the wet ingredients with the dry mix, stirring well to avoid clumps.
  5. Gently fold in the crawfish, onion, bell pepper, and cheese.
  6. Pour the mixture into a greased baking dish.
  7. Bake for 30-35 minutes or until the top is golden brown and a toothpick comes out clean.
  8. Allow to cool slightly before serving.
