- 1 cup cornmeal
- 1 cup milk
- 1 cup crawfish tails (cooked)
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/2 cup shredded cheddar cheese
- 2 eggs
- 1/4 cup vegetable oil
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the cornmeal, baking powder, salt, and black pepper.
- In another bowl, whisk together the milk, eggs, and vegetable oil until smooth.
- Combine the wet ingredients with the dry mix, stirring well to avoid clumps.
- Gently fold in the crawfish, onion, bell pepper, and cheese.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden brown and a toothpick comes out clean.
- Allow to cool slightly before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
