Description

A creamy and guilt-free side dish that brings the comforting flavors of traditional mashed potatoes.


Ingredients

Scale
  • 1 large head of cauliflower, cut into florets
  • 2 garlic cloves, peeled
  • 2 tablespoons unsalted butter
  • 2 tablespoons cream cheese
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 2–3 tablespoons milk or plant-based milk (optional)
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Steam the cauliflower and garlic for 10–12 minutes, or until soft.
  2. Transfer the steamed cauliflower and garlic to a food processor or blender.
  3. Add in the unsalted butter, cream cheese, salt, and black pepper.
  4. Blend the mixture until smooth, adding milk one tablespoon at a time if needed for consistency.
  5. Taste and adjust seasoning to your preference.
  6. Garnish with chopped chives or parsley if desired. Serve warm and enjoy!

Notes

For a vegan version, use plant-based butter and cream cheese. Adjust seasonings and add-ins to taste for different flavors.
