A creamy and guilt-free side dish that brings the comforting flavors of traditional mashed potatoes.
Ingredients

- 1 large head of cauliflower, cut into florets
- 2 garlic cloves, peeled
- 2 tablespoons unsalted butter
- 2 tablespoons cream cheese
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 2–3 tablespoons milk or plant-based milk (optional)
- Chopped chives or parsley for garnish (optional)
Instructions
- Steam the cauliflower and garlic for 10–12 minutes, or until soft.
- Transfer the steamed cauliflower and garlic to a food processor or blender.
- Add in the unsalted butter, cream cheese, salt, and black pepper.
- Blend the mixture until smooth, adding milk one tablespoon at a time if needed for consistency.
- Taste and adjust seasoning to your preference.
- Garnish with chopped chives or parsley if desired. Serve warm and enjoy!
Notes
For a vegan version, use plant-based butter and cream cheese. Adjust seasonings and add-ins to taste for different flavors.
