Description

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste

Instructions

  1. Sauté the chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until the orzo is cooked.
  4. Stir in the heavy cream, fresh spinach, lemon juice, and lemon zest.
  5. Cook until the spinach is wilted and the mixture is heated through.
  6. Stir in the parmesan cheese until melted and creamy.
  7. Season with salt and pepper to taste before serving.

Notes

For a thicker sauce, let it simmer a bit longer after adding cream. Make sure to evenly dice chicken for even cooking. Store leftovers in an airtight container for up to 3 days.
