- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 3 cups chicken broth
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
Instructions
- Sauté the chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until the orzo is cooked.
- Stir in the heavy cream, fresh spinach, lemon juice, and lemon zest.
- Cook until the spinach is wilted and the mixture is heated through.
- Stir in the parmesan cheese until melted and creamy.
- Season with salt and pepper to taste before serving.
Notes
For a thicker sauce, let it simmer a bit longer after adding cream. Make sure to evenly dice chicken for even cooking. Store leftovers in an airtight container for up to 3 days.
