- 1 package gnocchi
- 2 cups broccoli florets
- 2 cups kale, chopped
- 1/2 cup pesto sauce
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Cook the gnocchi according to package instructions until they float, usually about 3-5 minutes.
- Heat olive oil in a large skillet over medium heat.
- Add the broccoli florets and sauté until tender, about 4-5 minutes.
- Once the broccoli is tender, add the chopped kale to the skillet and cook until wilted, around 2-3 minutes.
- Stir in the cooked gnocchi and pesto sauce, making sure each piece is coated.
- Squeeze fresh lemon juice over the mixture and season with salt and pepper to taste.
- Serve with grated Parmesan cheese if desired, and enjoy!
