Description

A comforting dish of orzo pasta in a creamy sauce with earthy mushrooms and Parmesan cheese.


Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until translucent.
  2. Add sliced mushrooms and cook for 5-7 minutes until softened.
  3. Stir in orzo pasta and cook for 1 minute.
  4. Pour in vegetable broth, season with salt and pepper, and bring to a gentle boil.
  5. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 10-12 minutes.
  6. Stir in heavy cream and Parmesan cheese until combined.
  7. Garnish with fresh parsley and serve warm.

Notes

Great with a side of garlic bread or a crisp salad. Leftovers can be stored in an airtight container for up to 3 days.
