- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until translucent.
- Add sliced mushrooms and cook for 5-7 minutes until softened.
- Stir in orzo pasta and cook for 1 minute.
- Pour in vegetable broth, season with salt and pepper, and bring to a gentle boil.
- Reduce heat and simmer until orzo is tender and liquid is absorbed, about 10-12 minutes.
- Stir in heavy cream and Parmesan cheese until combined.
- Garnish with fresh parsley and serve warm.
Notes
Great with a side of garlic bread or a crisp salad. Leftovers can be stored in an airtight container for up to 3 days.
