Ingredients

- 250g lamb mince
- 1 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
- 1 cup cooked bulgur wheat or quinoa
- 1 cup peas (fresh or frozen)
- 1 small red onion, finely chopped
- 1 lemon (juice and zest)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Sauté the lamb in a skillet over medium heat until browned and crispy. Season with salt and pepper.
- In a large bowl, combine the cooked bulgur wheat, parsley, mint, peas, and red onion.
- In a small bowl, mix the lemon juice, zest, and olive oil to make the dressing.
- Pour the dressing over the tabbouleh mixture and toss to combine.
- Serve the crispy lamb on top of the tabbouleh and enjoy.
Notes
For an extra crunch, add grated cucumber or diced tomato. For a vegan option, substitute lamb with chickpeas or lentils.
