- 4 flour tortillas
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 1/2 cup cooked chicken, shredded (optional)
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp olive oil or melted butter
- Salt and pepper to taste
- 1 tsp ground cumin (optional)
- 1 tsp chili powder (optional)
- 1/4 cup sour cream (for dipping, optional)
- 1/4 cup salsa (for dipping, optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Lay the tortillas flat and sprinkle the cheese over half of each tortilla.
- Add shredded chicken, diced bell peppers, and onions on top of the cheese, seasoning with salt, pepper, cumin, and chili powder.
- Fold each tortilla in half to form a half-moon shape, gently pressing to secure the fillings.
- Brush both sides of the quesadillas with olive oil or melted butter.
- Place the quesadillas on the baking sheet and bake for 10-12 minutes, flipping halfway through.
- Remove from the oven and slice into wedges. Serve warm with optional sour cream and salsa.
